Whole Sea Bass (from the Carmargue area of France) baked in sea salt with red rice risotto and fennel chutney in a vermouth sauce. Fennel wood-roasted monkfish with balsamic vinegar, served with raz-el-hanut spiced couscous, pepper jam and ruccola oil.
